Black honey: Like native honey, most consumers believe that black honey is black, but in fact, black honey only refers to the honey collected and brewed by black bees. Black bees are a species of bees that have been passed down from Europe. As long as they are concentrated in the Wanda Mountains in Northeast China and the Ili region of Xinjiang, black honey produced in the Raohe National Black Bee Protection Zone is the most famous. Compared to other bee species in China, black bees have strong resistance to disease and stress, stable genetic stability, and prominent nutritional components.

3、 Different production methods for honey
The types of honey can be divided into machine separated honey, nest honey, pressed honey, and concentrated honey
Nest honey is honey that brings honey to the nest together
Squeezing honey is the process of separating honey from the hive using a cloth bag or sieve to extract honey. Old style, frameless beekeeping often uses this method of honey extraction, and some so-called pure handmade honey is produced in this way
Concentrated honey refers to the honey that is processed by machine sterilization, heating, dehydration, decolorization, and deodorization of immature or high moisture content honey. Most supermarkets sell this type of honey
Concentrated honey can also be divided into two types
A. Non mature honey without any added substances can be dehydrated to reach the concentration of mature honey. Although there is a loss of nutrients during the processing, it can still be called honey. However, the actual situation is impossible.
B. Immature honey added with other ingredients for dehydration and other processing cannot be called honey according to national standards, but can only be called "honey products". If sold as honey, it is included in the category of fake honey.
4、 Different Harvesting Seasons for Honey
The types of honey can be divided into spring honey, summer honey, autumn honey, and winter honey, which should be easy to understand. Honey collected in spring is called spring honey, honey collected in summer is called summer honey, honey collected in autumn is called autumn honey, and honey collected in winter is naturally called winter honey
Spring honey mainly includes: rapeseed honey, purple cloud honey, sweet potato honey, apricot blossom honey, citrus honey, lychee honey, longan honey, and rubber tree honey
Summer honey mainly includes: black locust honey, jujube flower honey, linden tree honey, wolf tooth thorn honey, thorn honey, cotton honey, sweet clover honey, and persimmon tree honey
Autumn honey mainly includes: sunflower honey, lespedeza honey, buckwheat honey, and pumpkin honey
Winter honey mainly includes: duck foot wood honey, wild osmanthus flower honey, wild dam seed honey, eucalyptus grandiflorus honey, and loquat honey.
Among them, winter honey and summer honey have the best quality, followed by autumn honey, and spring honey is the worst. Because spring honey has a high water content and is prone to fermentation, it produces gas and turns the honey into acid.

Imported honey refers to honey imported from other countries
6、 What other types of honey are there, including water honey (immature honey), mature honey, and native honey
The distinction between mature honey and immature honey is shown in the diagram Water honey (immature honey): It generally refers to honey with relatively high water content collected before the honeycomb is covered. Compared to immature honey, the Baume concentration is basically below 40 degrees, and the actual production is mostly between 36-38 degrees. Mature honey:
refers to honey collected after the honeycomb has been covered. Strictly speaking, mature honey should be classified as covered honey, rather than simply based on Baume concentration. The number of days for producing capping honey is uncertain. During the period of a large high-quality honey source, capping honey can be produced within 5 days or more, which is the nature of bees. The size and quality of the honey source determine the length of the sealing time. The concentration of capping honey is relatively high, usually above 41 degrees Baume, with slight variations depending on the type of honey
Native honey:
refers to honey directly extracted from a beehive without any heating or concentration treatment.
Fake honey:
"honey" artificially mixed with industrial raw materials such as white granulated sugar and maltose (maltose).
. The "honey" made from the above ingredients and some honey can be called fake honey
7. Classification by Color
Honey has a certain color, and with different types of honey plants, the color varies greatly. It can be divided into light honey and dark honey according to color.
. Generally speaking, the quality of light colored honey is often better than that of dark colored honey, with better taste and odor. Therefore, the color of honey can be used as a basis for honey classification and as one of the indicators for measuring honey quality
8. Classified by honey grade
First class honey: including locust honey, linden tree honey, bramble honey, purple cloud honey, citrus honey, lychee honey, and wild osmanthus honey.
Second class honey: including jujube flower honey, rapeseed honey, sunflower honey, and cotton honey
Third class honey: Chinese tallow honey
Fourth class honey: eucalyptus honey, buckwheat honey.
